This type of salmon is smoked at low temperatures (below 30ºC), which "cures" the fish without cooking it, preserving its raw and juicy texture.
Thanks to this process, the meat remains silky, tender, and firm (it doesn't fall apart like hot smoked). Its flavour is refined: it has just the right touch of saltiness and a subtle smoky aroma that doesn't mask the fish's natural taste.
